Instant Pot Chicken Phở (Phở Gà)

Phở is one of Vietnam’s most well-known dishes but the chicken version doesn’t get as much attention. This is my favourite type of phở. My Instant Pot recipe makes it quick, easy and (of course) delicious.

Makes 6 bowls using a 6 qt Instant Pot

Ingredients

For broth:

  • 1 whole chicken
  • 2 yellow onions
  • 1 large piece of ginger
  • 2-3 stalks of lemongrass
  • 10-15 lime leaves (fresh or dried)
  • 3-4 tablespoons of salt (add more to taste)
  • 1 tablespoon of fish sauce
  • 1 tablespoon of sugar

To serve:

  • 1 pack of rice noodles
  • Green onion (chopped)
  • Cilantro (chopped)
  • Onion (thinly sliced)
  • Fried shallots
  • Bean sprouts
  • Lime (cut in wedges)
  • Thai basil

Instructions

  1. Roast the onions and ginger in your oven or on your bbq until the onions are charred. You want them charred so the flavours are easily released. I usually place them on a pan in the oven on broil.
  2. Cut up the chicken and separate the thighs and breast.
  3. Add all of the chicken, lemongrass (cut in half and smash the stalks to release some flavours), lime leaves, charred onions and ginger into the Instant Pot. Fill with water up to the max fill line.
  4. Pressure cook for 20-25 minutes.
  5. Release the pressure and remove all the ingredients.
  6. Top up the Instant Pot with water and put on the sauté function.
  7. Once boiling, add sugar, fish sauce and salt to taste. I’m usually a bit more liberal with the salt. 🙂

Serving

  1. Shred the chicken once it has cooled.
  2. Cook noodles according to package instructions.
  3. Pour broth over the noodles. Garnish with thinly sliced onion, cilantro, green onion and fried shallots.
  4. Serve with sprouts, Thai basil and lime. Add chili oil to spice it up.
